Product profile
Puffed rice flour is obtained by milling puffed rice. This latter is a natural product, which has undergone a thermical treatment without any chemical or colouring supplements. Its organoleptic characteristics are those of a slightly toasted cereal.
The productive technology consists firstly in a pre-heating process during which the rice reaches a temperature higher than 100° C and secondly in an expansion process exclusively through high-pressure steam. The final product is a grain transformed in size and thickness. The puffed rice flour maintains all the original puffed rice nutritional properties unaltered and, moreover, has some peculiar characteristics:
- A ready-to-be-used product with no need for a cooking process
- A long shelf-life
- A very good digestibility
It is rich in fibre and proteins.
Applications
The puffed rice flour is ideal for food applications that enhance its high digestibility and absence of cooking. It can be mixed to other flours for gluten free mixtures.
